    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 45-60 minutes until tender. Remove from water and let cool.

    Char the Octopus

    Once cooled, heat a grill or grill pan over high heat. Brush the octopus with olive oil, season with salt and black pepper, and grill for about 3-4 minutes on each side until charred and crispy.

    Prepare the Potatoes

    While the octopus is grilling, boil the potatoes in salted water until tender. Drain and let cool slightly. Cut into wedges and toss with olive oil, salt, and black pepper.

    Make the Labneh Sauce

    In a bowl, mix labneh with lemon juice and a pinch of salt. This will be the base for your sauce.

    Prepare the Gochujang Dressing

    In a small bowl, mix gochujang with a little olive oil and lemon juice to create a dressing.

    Assemble the Dish

    On a serving plate, spread the labneh sauce as a base. Arrange the grilled octopus on top, scatter the potato wedges around, and garnish with pickled lemon, mandarin segments, and fresh herbs. Drizzle with gochujang dressing.
