    Prepare the Pork Belly

    In a saucepan over medium heat, combine brown sugar and fish sauce. Stir until sugar is dissolved. Add pork belly and cook for about 10 minutes, until caramelized. Remove from heat and let it cool before slicing.

    Prepare the Vegetables

    In a bowl, mix julienned carrot and daikon with a pinch of salt and let it sit for about 15 minutes. Rinse and drain. Slice cucumber and set aside.

    Slice the toasted ciabatta rolls in half. Layer the sliced candied pork belly, followed by the pickled carrot and daikon, cucumber slices, and a generous handful of cilantro.
