Eggplant & Filling

Prepare eggplants
Preheat oven to 200°C (400°F). Rinse and dry the eggplants. Using a sharp knife, make a lengthwise deep slit on each eggplant leaving the stem end intact so the eggplant remains whole; do not cut through. Score the flesh inside the slit in a diamond pattern without piercing the skin.

Par-bake eggplants
Brush the outside and the scored interior lightly with neutral oil. Place on a baking tray lined with parchment. Roast for 12–15 minutes until the flesh begins to soften but the eggplant still holds shape. Remove and let cool slightly — this makes scooping and stuffing easier.

Prepare aromatics
Peel and finely mince shallots and garlic. Finely chop cilantro stems, white parts of green onions, and red chili if using.

Cook filling
Heat 2 tbs vegetable oil in a skillet over medium-high heat. Add minced shallots and garlic and sauté 1–2 minutes until fragrant. Add ground pork (or substitute) and break up with a spatula. Cook until no longer pink, about 4–6 minutes. Stir in chopped cilantro stems, chopped green onion whites, and chopped chili; cook 1 minute.

Season filling
Add 2 tbs fish sauce, 1 tbs light soy sauce, 1 tsp sugar, 1 tbs lime juice and 1/2 tsp ground white pepper. Cook another 1–2 minutes, stirring, until liquid mostly evaporates and flavors concentrate. Taste and adjust seasoning (add more fish sauce for saltiness, lime for acidity, sugar for balance). Remove from heat.

Scoop eggplant flesh
Using a spoon, gently press the roasted eggplant flesh inward along the scored lines to create a cavity, or scoop out some flesh leaving a 1 cm thick shell. Reserve any scooped flesh and finely chop it; fold into the cooked filling for extra eggplant flavor.

Stuff eggplants
Fill each eggplant cavity generously with the prepared filling, mounding it slightly above the slit but not so much that it falls off.

Finish baking
Return stuffed eggplants to the baking tray and bake at 200°C (400°F) for 10–12 minutes to meld flavors and heat through. If you prefer a lightly charred top, switch to broil/grill for 1–2 minutes, watching closely to avoid burning.

Make the sauce
While the stuffed eggplants bake, combine 1 tbs tamarind paste, 1.5 tbs palm sugar, 1 tbs fish sauce, 1/2 tbs soy sauce, 3 tbs water, 1 tsp chili flakes (or chopped fresh chilies) and 1 minced garlic clove in a small saucepan. Bring to a gentle simmer over medium-low heat, stirring until sugar dissolves and sauce slightly thickens, about 3–5 minutes. Taste and adjust balance: add more sugar if too sour, more tamarind/water if too sweet.

Finish sauce
Remove from heat and let cool slightly; sauce will thicken a bit as it cools. If too thick, thin with a little warm water to reach a glossy pouring consistency.
Garnish & Serve

To serve, place each stuffed eggplant on a platter. Spoon the warm Thai sauce over the stuffed portion, letting some run into the cavity and onto the tray for flavor. Garnish with fresh cilantro leaves and thinly sliced red chili. Serve with lime wedges on the side to squeeze over just before eating.

Suggested accompaniments: jasmine rice or steamed rice, and a light cucumber salad to balance richness.
