Prepare ingredients
Remove bread and cheese from packaging. If using tomato, slice into 4 thin slices. Wash and pat lettuce dry if using. Crack eggs into a small bowl and beat lightly with a fork; season with 1/2 tsp salt and 1/4 tsp black pepper. Mix mayonnaise and mustard in a small dish and set aside.

Cook luncheon meat
Heat a nonstick skillet over medium heat. Add 1 tsp neutral oil or a small pat of butter and swirl to coat. Lay the 4 luncheon meat slices in a single layer. Fry 2–3 minutes per side until golden brown and edges are crisp; press lightly with a spatula for even browning. Transfer to a plate and keep warm.

Cook eggs
Wipe skillet if needed and reduce heat to medium-low. Add a little butter (about 1/2 tbs). Pour the beaten eggs into the skillet. For folded/scrambled style: gently stir and fold until mostly set but still moist, about 1–2 minutes. For an omelet-style single fold: let eggs set without stirring, then fold to form a soft omelet. Remove from heat while slightly underdone; residual heat will finish cooking. Optionally season with remaining 1/2 tsp salt and 1/4 tsp pepper.

Assemble sandwiches
Spread mayonnaise-mustard mixture evenly on two slices of bread (one side each). Place a slice of cheddar on each mayo-coated bread slice. Top cheese with the hot folded/scrambled eggs, then place two pieces of fried luncheon meat on each. Add tomato slices and lettuce if using. Top each with the remaining bread slices, mayo-side down.

Grill sandwich (optional)
If you prefer a toasted, melty sandwich, heat the skillet over medium-low and add a small pat of butter. Place assembled sandwiches in the skillet. Press gently with a spatula or a grill press and cook 2–3 minutes per side until bread is golden-brown and cheese is melted. Reduce heat if bread browns too quickly.

Finish and serve
Remove sandwiches from skillet and let rest 1 minute. Slice each sandwich in half diagonally. Serve immediately while warm.

Use a nonstick or well-seasoned skillet to reduce sticking. Adjust heat to avoid burning luncheon meat or bread. If you have a sandwich press or panini maker, use it for even pressing and melting. Leftover luncheon meat can be reheated in the skillet before assembling.
