    If using store-bought pineapple buns or soft buns, slice each bun horizontally and set cut sides up. Lightly toast cut sides in a preheated 350°F (175°C) oven for 4–6 minutes or in a skillet until golden — this helps prevent sogginess.

Luncheon meat and eggs

    Prepare luncheon meat

    Pat luncheon meat slices dry with a paper towel. Heat a large nonstick skillet over medium-high heat and add 1 tsp neutral oil. Once shimmering, add the luncheon meat slices in a single layer (work in batches if needed). Fry 2–3 minutes per side until edges are crisp and browned. Optionally sprinkle 1 tsp sugar across the slices in the last 30 seconds and let it caramelize slightly for a glaze. Transfer to a plate and keep warm.

    Scrambled egg for sandwich

    In a bowl whisk together 4 eggs, 2 Tbsp milk, 1 tsp salt, and 1/2 tsp black pepper until well combined and slightly frothy. Melt 1 Tbsp butter in a clean nonstick skillet over medium-low heat. Pour eggs in and let sit 10–15 seconds, then gently stir with a spatula, folding eggs into large soft curds. Cook until mostly set but still glossy and slightly undercooked (they will finish resting). Remove from heat and keep warm.

    Pan-fried thin omelet (alternative egg style)

    If you prefer a folded omelet instead of scrambled eggs: melt 1 Tbsp butter over medium heat in a skillet, pour half the egg mixture and swirl to make a thin omelet (about 6–8 inches). Cook 1–2 minutes until set, loosen edges, fold or roll, and keep warm. Repeat for the second bun.

Butter-glaze and assembly

    Prepare spreads: mix 2 Tbsp softened butter with 1 tsp sweet or light soy sauce for a savory-sweet spread (optional). Set mayonnaise separately if using.

    Warm buns if needed. Spread about 1/2 Tbsp of the butter-soy mixture on the cut face of the bottom bun and spread 1/2 Tbsp softened butter on the top bun inside as well (or use full butter for richer result).

    Layering: On the bottom bun place a crisp lettuce leaf or pickled cucumber slices (1 piece per sandwich). Place two slices of fried luncheon meat on top. If you used sugar to caramelize, place the sweet-glazed side up. Add half of the scrambled eggs (or one folded omelet) on top of the luncheon meat. Drizzle about 1/2 tsp Kewpie mayonnaise or spread 1/2 Tbsp mayo on the top bun if desired.

    Assembly finish: Close the bun and press gently. If you like the top of the bun slightly glazed and warm, brush the outside top with the remaining 1/2 Tbsp softened butter and toast in a skillet or oven at 350°F (175°C) for 2–3 minutes until warmed and slightly glossy.

    Garnish: Sprinkle toasted sesame seeds and chopped scallion on the top or around the filling as desired. Serve immediately while hot.
