Noodles & prep
Boil noodles
Bring a large pot of salted water to a rolling boil. Add noodles and cook according to package instructions until just al dente (usually 3–5 minutes for fresh egg noodles, 8–10 for dried). Reserve 1 cup of pasta cooking water, then drain noodles and toss with 1 teaspoon of neutral oil to prevent sticking.
Sauce
In a small bowl or measuring cup, whisk together soy sauce, oyster sauce, fish sauce, dark soy (if using), light brown sugar, Shaoxing wine (if using), and chicken stock or water until sugar dissolves. Set aside.
Aromatics & cooking
Pour the prepared sauce into the pan and bring to a simmer. Let it bubble for 1 minute to slightly reduce and concentrate flavors.
Add the sliced BBQ pork and gently fold into the noodles, heating through for 1–2 minutes so the pork warms and picks up sauce flavor.
Stir in toasted sesame oil, sesame seeds, ground black pepper, and red pepper flakes (if using). Taste and adjust seasoning: add a little more soy if it needs salt or a squeeze of lime for brightness.
Finish & serve
Turn off the heat. Scatter the green parts of the scallions over the noodles and give one final gentle toss.
Divide garlic noodles with BBQ pork among plates or bowls. Serve immediately with lime wedges on the side for squeezing over, and additional sesame seeds or chopped scallion if desired.
