Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.

Whisk Sugar and Egg Yolks
In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

Cook the Custard
Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

Add Flavorings
Remove from heat. If making vanilla gelato, stir in the vanilla extract. If making chocolate gelato, whisk in the cocoa powder until well combined.

Chill the Mixture
Transfer the mixture to a bowl, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or overnight.
