Method

For Corn Tortillas

  1. 1

    Mix Ingredients

In a large mixing bowl, combine the corn masa harina and salt. Gradually add water, mixing until a smooth dough forms.

  2. 2

    Knead the Dough

Knead the dough for about 2-3 minutes until it is pliable and not sticky. If the dough is too dry, add a little more water; if too wet, sprinkle in a little more masa harina.

  3. 3

    Divide and Shape

Divide the dough into 8-10 equal portions and roll each portion into a ball. Flatten each ball slightly.

  4. 4

    Cook the Tortillas

Heat a griddle or skillet over medium-high heat. Cook each tortilla for about 30-45 seconds on each side, or until lightly browned and cooked through. Keep warm in a cloth until ready to serve.

For Flour Tortillas

  1. 5

    Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, and salt.

  2. 6

    Add Fat

Cut in the lard or vegetable shortening using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. 7

    Add Water

Gradually add water, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

  4. 8

    Divide and Shape

Divide the dough into 8 equal pieces, rolling each into a ball. Flatten each ball slightly.

  5. 9

    Cook the Tortillas

Heat a skillet over medium heat. Cook each tortilla for about 1 minute on each side, or until golden and slightly puffed. Keep warm in a cloth until ready to serve.
