Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together until well combined.

    Add Wet Ingredients

    Add the vegetable oil and water to the dry ingredients. Mix until a soft dough forms. If the dough is too sticky, add a little more flour as needed.

    Knead the Dough

    Turn the dough onto a floured surface and knead gently for about 2-3 minutes until smooth.

    Rest the Dough

    Cover the dough with a clean kitchen towel and let it rest for about 30 minutes.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium heat until it reaches about 375°F (190°C).

    Roll Out the Dough

    On a floured surface, roll out the rested dough to about 1/4 inch thick. Cut into squares or diamonds, approximately 2-3 inches wide.

    Fry the Sopapillas

    Carefully place the cut dough into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and puffed.

    Remove the fried sopapillas with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
