    Prepare the Jalapenos

    Wash the jalapeno peppers thoroughly under cold water. Slice them into thin rings, discarding the stems.

    Make the Pickling Brine

    In a medium saucepan, combine the white vinegar, water, salt, sugar, garlic cloves (smashed), black peppercorns, oregano, and bay leaves. Bring the mixture to a boil over medium heat, stirring until the salt and sugar are completely dissolved.

    Pack the Jars

    Sterilize your glass jars by placing them in boiling water for 10 minutes. Remove them carefully and let them cool. Pack the sliced jalapenos into the jars, leaving about half an inch of space at the top.

    Add the Brine

    Once the brine has boiled, remove it from heat and let it cool slightly. Pour the hot brine over the jalapenos in the jars, ensuring they are completely submerged. Leave a little space at the top of the jar.

    Seal and Cool

    Seal the jars with lids while the brine is still hot. Allow the jars to cool to room temperature before refrigerating.

    Marinate

    Let the jalapenos pickle in the refrigerator for at least 24 hours before using. For best flavor, allow them to marinate for 1 week.
