Preparation of Beans

    Soak the Beans

    In a large bowl, add the pinto beans and cover them with water. Let them soak overnight or for at least 6-8 hours to soften.

    Cook the Beans

    After soaking, drain the beans and place them in a large pot. Add 6 cups of fresh water and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beans are tender.

Cooking the Refried Beans

    Sauté the Aromatics

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Mash the Beans

    Once the beans are cooked and tender, drain them, reserving some of the cooking liquid. Add the beans to the skillet with the sautéed onion and garlic. Using a potato masher, mash the beans to your desired consistency.

    Stir in 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper. If the beans are too thick, add reserved cooking liquid a little at a time until you reach the desired consistency.

    Remove the skillet from heat and stir in 1 tablespoon of lime juice for a fresh flavor.
