Preparation
- 1
Prepare Jalapenos
Wash the jalapenos thoroughly under cold water. Pat them dry with a clean kitchen towel. Cut off the stems and slice them in half lengthwise. Remove seeds if you prefer less heat.
- 2
Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Whisk together until well mixed. In a separate bowl, beat the egg and then add the milk. Mix until combined. Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be thick.
Cooking
- 3
Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat. The oil should be hot enough that a drop of batter sizzles immediately when added.
- 4
Coat the Jalapenos
Dunk each jalapeno half into the batter, ensuring it is fully coated. Allow any excess batter to drip off.
- 5
Fry the Jalapenos
Carefully place the coated jalapenos in the hot oil, a few at a time, to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- 6
Drain and Serve
Once fried, remove the jalapenos with a slotted spoon and let them drain on paper towels. Serve hot, with optional sour cream and hot sauce on the side.
