Method

Preparation

  1. 1

    Scoop and Freeze

Scoop the vanilla ice cream into 8 balls using an ice cream scoop. Place them on a baking sheet lined with parchment paper. Freeze the ice cream balls for at least 2 hours or until they are very firm.

Breading and Batter

  1. 2

    Prepare Cornflake Mixture

In a large bowl, crush the cornflakes into small pieces. Stir in the cinnamon and sugar until combined.

  2. 3

    Make Batter

In a separate bowl, whisk together the all-purpose flour, eggs, milk, and vanilla extract until smooth.

Frying

  1. 4

    Heat Oil

In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

  2. 5

    Coat the Ice Cream

Take the frozen ice cream balls out of the freezer. Dip each ball first into the batter, allowing any excess to drip off, then roll it in the cornflake mixture until well coated.

  3. 6

    Fry

Carefully place the coated ice cream balls into the hot oil, a few at a time. Fry for about 30-40 seconds or until golden brown. Remove with a slotted spoon and drain on a paper towel.

Serving

  1. 7

    Plate and Garnish

Serve immediately while hot. Drizzle with chocolate syrup, add a dollop of whipped cream, and sprinkle with chopped nuts as desired.
