Tender strips of marinated chicken or steak cooked with sautéed onions, bell peppers and tomatoes. Served with lettuce, guacamole, sour cream and pico de gallo. Accompanied with rice and beans and tortillas.

Marinating the Chicken or Steak

    Marinate the Meat

    In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken or steak and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Preparing the Vegetables

    Chop the Vegetables

    Slice the bell peppers, onion, and tomato into thin strips. Set aside.

Cooking the Fajitas

    Cook the Meat

    Heat a large skillet over medium-high heat. Remove the marinated chicken or steak from the refrigerator, and add it to the skillet. Cook for about 6-8 minutes, or until cooked through, flipping halfway through. Remove from the skillet and let it rest before slicing into strips.

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if needed. Add the sliced bell peppers and onion, and sauté for about 4-5 minutes until softened. Add the tomato and cook for an additional 2 minutes. Combine the sliced meat with the vegetables and toss to combine.

    Prepare the Sides

    While the fajitas are cooking, prepare the rice and black beans according to package instructions.

    Serve

    Warm the tortillas in a dry skillet or microwave. To serve, place a portion of the chicken or steak and vegetable mixture on a tortilla, and top with lettuce, guacamole, sour cream, and pico de gallo. Roll up and enjoy!
