Chimichanga Filling Preparation

Prepare the Filling
In a large mixing bowl, combine shredded chicken, refried beans, shredded cheese, and taco seasoning. Mix well until evenly combined.

Assemble the Chimichangas
Lay out a flour tortilla on a flat surface. Place a generous amount of the filling mixture in the center of the tortilla. Fold the sides over the filling and roll it up tightly. Repeat with remaining tortillas and filling.

Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until hot.

Fry the Chimichangas
Carefully place the assembled chimichangas seam-side down in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove from oil and place on paper towels to drain excess oil.

Assemble the Dish
Place each fried chimichanga on a plate. Top with cheese sauce, shredded lettuce, sour cream, pico de gallo, and guacamole.

Serve the chimichangas with a side of cooked rice and additional refried beans.
