    Clean and slice the leeks into thin rings. In a skillet, melt the butter over medium heat. Add the leeks and cook until softened, about 5-7 minutes. Add minced garlic and thyme, and sauté for another 2 minutes. Season with salt and pepper, then set aside.

    In a large pot, bring the Normandy cider to a simmer over medium heat. Add the cleaned mussels and cover the pot with a lid. Steam the mussels for about 5-7 minutes, or until they open up. Discard any mussels that do not open.

    Once the mussels are cooked, add the melted leeks to the pot and gently stir to combine. Serve the mussels immediately in bowls, garnished with additional thyme if desired, alongside slices of toasted baguette.
