Making the Profiterole Dough

1. In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. 2. Once boiling, remove from heat and stir in flour until a dough forms. 3. Let the dough cool slightly, then beat in eggs one at a time until smooth. 4. Preheat oven to 400°F (200°C). 5. Pipe or spoon the dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown. Allow to cool.

Preparing the Dark Chocolate Mousseline

1. Melt dark chocolate in a heatproof bowl over simmering water. Let cool slightly. 2. In a separate bowl, whip heavy cream until soft peaks form. 3. In another bowl, whisk egg yolks with powdered sugar and vanilla until pale. 4. Fold melted chocolate into egg yolk mixture, then gently fold in whipped cream. Chill until ready to use.

Making the Chocolate Sauce

1. In a saucepan, heat heavy cream over medium heat until just simmering. 2. Remove from heat and add dark chocolate, stirring until melted and smooth. 3. Stir in sugar and butter until combined. Keep warm.

Assembling the Profiteroles

1. Cut the tops off the cooled profiteroles. 2. Fill each with dark chocolate mousseline using a piping bag. 3. Replace the tops and drizzle with warm chocolate sauce before serving.
