    Prepare the Frites

    Peel the potatoes and cut them into thin strips. Rinse them in cold water to remove excess starch, then dry thoroughly with a kitchen towel.

    Fry the Frites

    Heat olive oil in a large pot over medium-high heat. Once hot, add the potato strips in batches and fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt and fresh herbs.

    Prepare the Steak

    Season the hanger steak generously with salt and crush the black peppercorns. Press the peppercorns into the meat on both sides.

    Cook the Steak

    In a large skillet over medium-high heat, melt the butter and add the steak. Cook for approximately 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak and let it rest.

    Make the Sauce

    In the same skillet, add the heavy cream and scrape up any brown bits from the bottom of the pan. Simmer until the sauce thickens slightly, about 3-4 minutes. Adjust seasoning with salt if necessary.

    Serve

    Slice the rested steak against the grain and serve with the herb frites on the side. Drizzle the au poivre sauce over the steak.
