Make the crust
In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Preheat the oven
Preheat your oven to 375°F (190°C).

Cook the bacon
In a skillet over medium heat, cook the bacon until crispy. Remove from heat, drain on paper towels, and chop into small pieces.

Roll out the dough
On a floured surface, roll out the chilled dough to fit a 9-inch pie dish. Place the dough in the dish and trim the edges.

Assemble the filling
In a mixing bowl, whisk together the eggs, heavy cream, black pepper, and nutmeg. Stir in the cooked bacon and shredded Gruyère cheese.

Bake the quiche
Pour the filling into the prepared crust. Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is golden.

Let the quiche cool for a few minutes before slicing. Serve warm with dressed greens on the side.
