    Prepare the Ingredients

    Dice the onion and potatoes, and remove the casing from the fennel sausage.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until softened and caramelized, about 10-15 minutes.

    Cook the Sausage

    In the same skillet, add the fennel sausage and break it apart with a spatula. Cook until browned and cooked through, about 8-10 minutes.
