Preparation of Cherries

    Wash Cherries

    Rinse the fresh Maraschino cherries under cold running water to remove any dirt or impurities.

    Pit Cherries

    Using a cherry pitter or a small knife, carefully pit the cherries, ensuring not to damage the fruit.

Making Syrup

    Combine Ingredients

    In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Stir the mixture over medium heat until the sugar completely dissolves.

    Add Flavoring

    Once the sugar is dissolved, remove the saucepan from heat and stir in 1 tsp of almond extract and 1 tsp of red food coloring.

Canning Process

    Pack Cherries

    Carefully pack the pitted cherries into sterilized canning jars, leaving about 1/2 inch of headspace at the top.

    Fill with Syrup

    Pour the prepared syrup over the packed cherries, ensuring they are fully submerged, and leave the same 1/2 inch headspace.

    Seal Jars

    Wipe the rims of the jars with a clean cloth to remove any syrup residue. Place the lids on the jars and screw on the metal rings until they are fingertip tight.

Processing Jars

    Boil Jars

    In a large pot, bring 4 cups of water to a boil. Carefully place the sealed jars into the boiling water. Ensure the jars are submerged by at least 1 inch of water.

    Process for Preservation

    Boil the jars for 15 minutes to properly seal and preserve the cherries.

    Cool and Store

    After processing, carefully remove the jars from the boiling water and let them cool on a clean kitchen towel. Once cooled, ensure the lids are sealed by pressing down in the center of each lid. Store the jars in a cool, dark place.
