Rinse the fish fillets under cold water and pat them dry with paper towels. Cut them into bite-sized pieces.

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water while whisking until you achieve a smooth batter.

In a deep fryer or large pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

Dip each piece of fish into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy.
