Gin Preparation

    Prepare the Botanicals

    In a large bowl, combine the juniper berries, coriander seeds, angelica root, orris root, lemon peel, orange peel, cardamom pods, and cinnamon stick. Ensure they are well mixed.

    Infuse the Spirit

    In a large glass jar, combine the neutral grain spirit with the botanical mixture. Seal the jar tightly and let it steep for 24 to 48 hours, shaking it gently every 12 hours.

    Strain the Mixture

    After the infusion period, strain the mixture through a fine mesh sieve or cheesecloth to remove the solids. Discard the solids.

    Dilute with Water

    Add the water to the strained liquid and stir well. This will lower the alcohol content and help in flavoring.

    Bottle the Gin

    Transfer the finished gin into a clean bottle. Seal it tightly and label it.

    Let it Rest

    Allow the gin to rest for at least a week before tasting, as this will help the flavors to meld and mature.
