Method

Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

    Soaking the Fries

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Drying the Potatoes

    Drain and pat the potato strips dry with paper towels.

    Frying the Fries

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

    Seasoning the Fries

    Drizzle the fries with truffle oil, then sprinkle with grated Parmesan cheese, salt, and black pepper. Toss to combine.

Making the Aioli

    Combining Ingredients

    In a bowl, mix together mayonnaise, grainy mustard, minced garlic, and lemon juice until well combined.

    Seasoning the Aioli

    Add salt and black pepper to taste. Mix again.
