1. Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer the rice to a bowl and mix in rice vinegar, sugar, and salt. Allow it to cool.
2. Prepare the Tempura Prawns
Cook the tempura prawns according to package instructions or your preferred method until crispy and golden brown. Set aside.
3. Slice the Avocado
Cut the avocado in half, remove the pit, and slice it thinly.
4. Assemble the Sushi Cone
Take a nori sheet and hold it in one hand. Place a small amount of sushi rice on one side of the nori, pressing it down slightly. Add a few slices of avocado and 2-3 tempura prawns on top. Drizzle with spicy mayo and sprinkle tobiko and sesame seeds on top.
5. Shape the Cone
Fold the nori over the filling at an angle to form a cone shape, making sure the filling is secure inside. You can use a small amount of water to seal the edge of the nori.
6. Serve
Repeat the assembly process with the remaining ingredients. Serve the sushi cones immediately with extra spicy mayo on the side.
