    Prepare the Ribeye

    Season the ribeye steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes before cooking.

    Cook the Ribeye

    Heat a skillet over medium-high heat and add olive oil. Once hot, add the ribeye steak and cook for 4-5 minutes on each side for medium-rare. Adjust time for desired doneness. Remove from heat and let rest.

    Make Garlic Butter

    In a small saucepan, melt the butter over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat.

    Prepare Peppercorn Sauce

    Crush the peppercorns and add them to the skillet used for the steak. Pour in the heavy cream and cook on low heat, stirring, until thickened (about 5 minutes).

    Make Crispy Mashed Potatoes

    Boil the potatoes until fork-tender. Drain and mash with sour cream, cheddar cheese, bacon bits, salt, and pepper. Spread in a baking dish and bake at 400°F (200°C) for 20-25 minutes until crispy.

    Cook Seasonal Vegetables

    Steam or sauté the seasonal vegetables until tender. Season with salt and pepper to taste.

    Serve

    Slice the ribeye and serve with garlic butter drizzled on top. Serve alongside crispy mashed potatoes and seasonal vegetables, topped with peppercorn sauce.
