Prepare the Chicken
In a large skillet, heat vegetable oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 7-10 minutes.

Make the Sweet Soy Ginger Glaze
In a small bowl, combine soy sauce, minced ginger, and honey. Pour this mixture over the cooked chicken and stir until well coated. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Prepare the Wontons
In the same skillet, add more oil if necessary and fry the wonton wrappers until golden brown and crispy. Remove and drain on paper towels.

Make the Spicy Aioli
In a small bowl, mix mayonnaise and sriracha sauce until well combined. Adjust spice level to taste.

Assemble the Wraps
Place a spoonful of the sweet soy ginger chicken mixture into a romaine lettuce leaf. Top with chopped peanuts, crispy wontons, and cilantro. Drizzle with spicy aioli before serving.
