    Prepare the crust

    Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth. Add the vanilla extract and sour cream, mixing until well combined. Add the eggs one at a time, mixing on low speed until just combined. Finally, fold in the strawberry puree.

    Bake the cheesecake

    Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results.
