Directions
- 1
Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 2
Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in Calabrian chili paste and cook for another minute.
- 3
Add Tomatoes
Add canned whole tomatoes (with their juice) to the skillet. Break the tomatoes apart with a spoon, and season with salt and black pepper. Let simmer for about 15-20 minutes, stirring occasionally.
- 4
Combine Pasta and Sauce
Add the cooked spaghetti to the sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency.
- 5
Prepare Whipped Ricotta
In a bowl, whisk together ricotta cheese and a pinch of salt until creamy and smooth.
- 6
Serve
Serve the spaghetti topped with whipped ricotta, fresh basil leaves, and grated parmesan cheese.
