    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is done cooking, transfer it to a large bowl, and gently fold in the vinegar mixture. Let it cool to room temperature.

    Prepare the Salmon

    While the rice is cooling, heat a non-stick skillet over medium-high heat. Season the salmon fillet with salt and sesame oil. Sear the salmon for about 2-3 minutes on each side until golden brown and cooked through. Remove from heat and let it cool slightly.

    Assemble the Sushi

    On a sushi mat or a clean surface, lay one nori sheet down. Spread a layer of sushi rice evenly over the nori, leaving about 1 inch at the top. Place a strip of seared salmon along the center, and add some shaved serrano peppers on top.

    Press and Cut

    Using the sushi mat, roll the sushi tightly from the bottom up. Once rolled, press gently to shape. Use a sharp knife to slice the sushi roll into bite-sized pieces.

    Serve

    Drizzle with soy sauce and garnish with additional shaved serrano peppers. Serve immediately.
