Roast the Broccoli
Preheat your oven to 200°C (400°F). Toss the broccoli florets with olive oil and a pinch of salt. Spread them on a baking sheet and roast for 15-20 minutes, or until they are tender and slightly charred.

Prepare the Rice Noodles
In a pot of boiling water, cook the rice noodles according to the package instructions. Drain and set aside.

Make the Curry
In a large saucepan, heat a little oil over medium heat. Add the red curry paste and sauté for 1-2 minutes until fragrant. Stir in the coconut milk, peanut butter, fish sauce, and lime juice. Bring to a simmer.

Add the Prawns
Add the prawns to the curry sauce and cook for about 5-7 minutes, or until they are pink and cooked through. Season with salt to taste.

Serve
Divide the cooked rice noodles among bowls, ladle the peanut prawn curry over the noodles, and top with roasted broccoli. Garnish with fresh cilantro before serving.
