Baking Instructions

  1. 1

    Prepare the Oven and Ramekins

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with flour. Tap out the excess flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and eggs until light and frothy. Add in the vanilla extract and mix well.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and gently fold until combined. Be careful not to deflate the mixture.

  5. 5

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined, being careful not to overmix.

  6. 6

    Bake

Divide the batter evenly among the prepared ramekins. Place them on a baking tray and bake in the preheated oven for approximately 12-14 minutes, or until the edges are firm but the center is still soft.

  7. 7

    Serve

Remove from the oven and let sit for 1 minute. Invert each ramekin onto a plate, and serve immediately with fresh raspberries and a scoop of Tahitian vanilla ice cream.
