Form the Burger Patties
In a bowl, season the ground beef with salt and black pepper. Divide the beef into two equal portions and form into patties, making them slightly larger than the buns to account for shrinkage during cooking.

Cook the Patties
Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side. Flip the patties and place a slice of cheddar cheese on top of each patty. Cook for another 4-5 minutes, or until the cheese is melted and the patties are cooked to your desired doneness.

Assemble the Burger
Toast the burger buns if desired. On the bottom half of each bun, place a lettuce leaf, followed by a burger patty with melted cheese, pickles, and a generous amount of roasted onion aioli. Top with the other half of the bun.

Serve immediately with your choice of sides, such as fries or a salad.
