    Prepare the Filling

    In a large bowl, combine ground pork, chopped cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Assemble Gyoza

    Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water and fold the wrapper in half to create a semicircle. Pinch the edges to seal, making pleats if desired.

    Cook the Gyoza

    Heat a large non-stick skillet over medium heat. Add a tablespoon of oil and place the gyoza in the skillet, flat side down. Cook for 2-3 minutes until the bottoms are golden brown. Carefully add 1/4 cup water to the skillet and cover immediately. Steam the gyoza for about 5-6 minutes until cooked through.

    Serve

    Remove the lid and let any remaining water evaporate. Serve hot with hot mustard on the side for dipping.
