Make the Pastry
In a large bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Divide the dough into 6 equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
Peel, core, and slice the apples into thin wedges. In a mixing bowl, toss the apples with sugar, cinnamon, nutmeg, and lemon juice. Fold in the toasted almonds until evenly distributed.

Assemble the Pies
Preheat the oven to 375°F (190°C). Roll out each disc of pastry on a lightly floured surface to fit your individual pie dishes. Place the pastry in the dishes, fill with the apple mixture, and cover with a top layer of pastry. Seal the edges and cut a few slits in the top to vent.

Bake the Pies
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is bubbly. Allow them to cool slightly before serving.

Serve each pie warm with a scoop of Canadian maple ice cream on top.
