Prepare the Blackened Chicken
1. Pat the chicken breasts dry and coat them with olive oil. Rub the Cajun seasoning all over the chicken until well covered. Heat a skillet over medium-high heat and add a little oil. When hot, add the chicken and cook for about 4-5 minutes on each side until charred and cooked through. Remove from skillet and let rest.

Make the Warm Potato Salad
2. While the chicken is cooking, boil the potatoes in salted water until tender. Drain and let cool slightly, then chop into bite-sized pieces. In a skillet, cook the bacon until crispy, then remove and chop. In a bowl, mix the potatoes with bacon, horseradish sauce, and green onions. Adjust seasoning with salt and pepper.

Prepare the Creamy Coleslaw
3. In a large bowl, combine shredded cabbage, carrots, mayonnaise, apple cider vinegar, salt, and pepper. Toss until well mixed. Chill in the fridge until ready to serve.
