Prepare the Ahi Tuna
Season the Ahi tuna with salt and pepper. Coat the tuna evenly with sesame seeds on all sides.

Sear the Tuna
Heat a non-stick skillet over medium-high heat. Add a small amount of oil and sear the sesame-crusted Ahi tuna for about 30 seconds on each side until it’s rare in the center. Remove from heat and let it rest.

Fry the Wontons
In the same skillet, fry the wonton wrappers until they are golden and crispy. Remove and drain on paper towels.

Make Wasabi Aioli
In a small bowl, mix mayonnaise and wasabi to make the wasabi aioli. Adjust the wasabi amount to your taste.

Prepare Avocado
Slice the avocado into thin pieces.

Assemble the Crisps
On each crispy wonton, place a slice of avocado, followed by a piece of seared Ahi tuna. Drizzle with spicy mayo and a small dollop of wasabi aioli. Garnish with chopped green onions.
