Doughnut Preparation

    Make the Doughnut Batter

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, eggs, and vanilla extract. Melt the butter and add it to the wet mixture.

    Mix the Ingredients

    Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.

    Heat the Oil

    In a large, deep pot, heat the vegetable oil to 375°F (190°C).

    Fry the Doughnuts

    Using a spoon or piping bag, carefully drop spoonfuls of the batter into the hot oil. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

    In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.

Lemon Curd Preparation

    In a medium saucepan, whisk together the lemon juice, sugar, and eggs until smooth.

    Place the saucepan over medium heat and cook while stirring continuously until the mixture thickens and coats the back of a spoon.

    Remove from heat and stir in the butter and lemon zest until fully melted and combined.

    Transfer the lemon curd to a bowl and let it cool to room temperature.
