    Make the Pastry Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into four equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Apple Filling

    Peel, core, and slice the apples into thin wedges. In a large bowl, toss the apple slices with granulated sugar, ground cinnamon, lemon juice, chopped toasted almonds, and cornstarch. Ensure the apples are evenly coated. Let the mixture sit for about 15 minutes to allow the flavors to meld.

Assembly and Baking

    Assemble the Pies

    Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out each dough disc to fit your individual pie dishes. Place the rolled dough into the dishes, allowing some overhang. Fill each with the prepared apple mixture, then fold the overhanging dough over the filling, creating a rustic look.

    Brush the tops of the pies with the beaten egg and sprinkle with sugar for a touch of sweetness and shine.
