Divide the dough into four equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Peel, core, and slice the apples into thin wedges. In a large bowl, toss the apple slices with granulated sugar, ground cinnamon, lemon juice, chopped toasted almonds, and cornstarch. Ensure the apples are evenly coated. Let the mixture sit for about 15 minutes to allow the flavors to meld.

Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out each dough disc to fit your individual pie dishes. Place the rolled dough into the dishes, allowing some overhang.
