Method
Tataki-Style Steak

Prepare the Marinade
In a bowl, mix together soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger.

Marinate the Steak
Place the beef tenderloin in the marinade and let it sit for at least 30 minutes, preferably 1-2 hours in the refrigerator.

Rest and Slice
Remove the steak from the skillet, sprinkle with black sesame seeds, let it rest for 10 minutes, and then slice thinly against the grain.

Garnish
Serve with chopped green onions on top.
Ponzu Sauce

Combine Ingredients
In a small bowl, whisk together soy sauce, yuzu or lemon juice, mirin, rice vinegar, and dashi stock until well blended.

Serve
Pour the ponzu sauce into a serving dish for dipping.
Seared Salmon Sushi

Prepare Sushi Rice
Rinse sushi rice under cold water until water runs clear. Cook according to package instructions. Once cooked, mix with rice vinegar, sugar, and salt.

Prepare Nori Sheets
Cut nori sheets in half and lay them shiny side down on a bamboo mat.

Assemble Sushi
Spread a thin layer of sushi rice over the nori, leaving a small border at the edges. Place thin slices of seared salmon on top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll.

Slice and Serve
Slice the sushi into bite-sized pieces and serve with wasabi and pickled ginger.
Tuna & Avocado Crunch Roll

Prepare Sushi Rice
Follow the same method as for the seared salmon sushi to prepare the sushi rice.

Assemble Sushi
Lay a nori sheet on a bamboo mat, spread sushi rice evenly, and place a line of tuna, avocado, and cucumber down the center.

Roll the Sushi
Roll tightly using the bamboo mat and then coat the outside with panko breadcrumbs for a crunchy texture.

Slice and Serve
Slice the roll into pieces and serve with soy sauce for dipping.
