Harissa Grilled Chicken

Prepare the Chicken
In a bowl, mix harissa paste, olive oil, salt, and black pepper. Add chicken breasts and coat well. Let marinate for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and let rest.

Prepare the Chickpeas
Rinse and drain the canned chickpeas. In a mixing bowl, combine chickpeas, lemon juice, olive oil, cumin, paprika, salt, and black pepper. Mix well and let marinate for at least 15 minutes.
Grilled Vegetables

Prepare the Vegetables
Slice the bell peppers into strips. If using jarred artichoke hearts, drain them. In a bowl, toss artichokes and bell peppers with olive oil, salt, and black pepper.

Grill the Vegetables
Preheat the grill or grill pan over medium heat. Grill the peppers and artichokes for about 5-6 minutes or until tender and grill marks appear. Remove from grill.

Cook the Rice
Cook jasmine rice according to package instructions. Typically, this involves rinsing the rice and boiling it in double the amount of water until tender.

Assemble the Bowl
In a large bowl or individual serving bowls, layer jasmine rice, then top with harissa grilled chicken, marinated chickpeas, grilled artichokes, grilled peppers, kalamata olives, and gem tomatoes. Add a dollop of hummus and tzatziki on the side.
