Method
Preparation
- 1
Cook the Lobster
Bring a large pot of salted water to a boil. Add the whole lobster and cook for about 12-15 minutes until it turns bright red. Remove from water and allow to cool. Once cooled, crack the shell and remove the meat, cutting it into bite-sized pieces.
- 2
Prepare the Prawns
Peel and devein the prawns. Rinse under cold water and set aside.
- 3
Chop the Shallots and Parsley
Finely chop the shallots and Italian parsley.
- 4
Halve the Cherry Tomatoes
Slice the cherry tomatoes in half and set aside.
Cooking the Pasta and Sauce
- 5
Cook the Spaghetti
In the same pot you used for the lobster, bring salted water to a boil again and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the spaghetti.
- 6
Make the Lobster-Lemon Butter Sauce
In a large skillet, melt the butter over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes. Pour in the white wine and let it reduce by half, about 5 minutes.
- 7
Add the Prawns and Tomatoes
Add the prawns and halved cherry tomatoes to the skillet. Cook until the prawns turn pink and the tomatoes begin to soften, about 3-4 minutes.
- 8
Combine with Pasta and Lobster
Add the cooked spaghetti and lobster meat to the skillet. Toss to combine, adding reserved pasta water as needed for sauce consistency. Stir in lemon juice, salt, and black pepper to taste.
- 9
Garnish and Serve
Remove from heat and stir in the chopped Italian parsley before serving. Serve hot.
