Bake the Salmon
Place the herb-crusted salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Start the Sauce
In a saucepan, combine the chopped shallots and white wine. Bring to a simmer and reduce until the liquid is almost evaporated.

Add Cream
Add the heavy cream to the reduced wine and shallots. Simmer gently for about 5 minutes until slightly thickened.

Finish the Sauce
Whisk in the cold, cubed butter a few pieces at a time, allowing each addition to emulsify before adding more. Stir in truffle oil, and season with salt and white pepper to taste.
Preserved Tomatoes

Prepare the Tomatoes
Preheat the oven to 300°F (150°C). In a bowl, toss the cherry tomatoes with olive oil, minced garlic, chopped basil, and salt.

Roast the Tomatoes
Spread the tomatoes on a baking sheet and roast for 1-1.5 hours until they are soft and slightly caramelized.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.
