Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Coat the Chicken

Set up a breading station with three shallow dishes. Place flour in the first dish, beat eggs in the second dish, and combine breadcrumbs and grated Parmesan cheese in the third dish. Dredge each chicken breast in flour, dip in beaten eggs, then coat with the breadcrumb mixture.

  3. 3

    Fry the Chicken

Heat olive oil in a skillet over medium heat. Add the breaded chicken breasts and cook for 4-5 minutes on each side until golden brown. Transfer to a baking dish.

Spaghetti Pomodoro Preparation

  1. 4

    Cook Spaghetti

In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. 5

    Make the Sauce

In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Pour in crushed tomatoes and add salt, pepper, and sugar. Simmer for 15 minutes.

  3. 6

    Combine Spaghetti and Sauce

Add the cooked spaghetti to the tomato sauce and toss to coat. Stir in fresh basil leaves.

Final Assembly

  1. 7

    Assemble Chicken Parmesan

Top each chicken breast with a generous amount of the spaghetti pomodoro and sprinkle shredded mozzarella cheese on top.

  2. 8

    Bake

Place the baking dish in the preheated oven and bake for 15-20 minutes until the cheese is melted and bubbly.

  3. 9

    Serve

Remove from the oven, garnish with extra fresh basil if desired, and serve hot.
