Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Drain and Dry
After soaking, drain the potatoes and pat them dry using a clean kitchen towel.

Season the Fries
In a large bowl, toss the dried potatoes with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Truffle Oil and Parmesan
Once the fries are done, remove them from the oven and immediately drizzle with truffle oil and sprinkle with grated Parmesan cheese. Toss gently to combine.

Combine Ingredients
In a mixing bowl, combine mayonnaise, grainy mustard, minced garlic, lemon juice, salt, and black pepper.

Whisk Together
Whisk the mixture until smooth and well combined.

Taste and Adjust
Taste the aioli and adjust seasoning with more salt or pepper if needed.

Cover the aioli and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
