Tataki-Style Steak

    Prepare the Marinade

    In a bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and a pinch of salt and pepper.

    Marinate the Steak

    Place the beef sirloin steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Sear the Steak

    Heat a grill or skillet over high heat. Remove the steak from the marinade and sear for about 1-2 minutes on each side until browned but still rare inside.

    Rest and Slice

    Remove the steak from the heat, let it rest for 5 minutes, then slice thinly against the grain. Garnish with chopped scallions and black sesame seeds.

Ponzu Sauce

    Mix the Ponzu

    In a bowl, combine soy sauce, yuzu juice (or lemon juice), mirin, rice vinegar, and dashi stock. Stir well and set aside.

Seared Salmon Sushi

    Cook the Sushi Rice

    Rinse sushi rice under cold water until water runs clear. Combine with water in a rice cooker and cook according to manufacturer's instructions.

    Season the Rice

    Once cooked, transfer the rice to a bowl. Mix rice vinegar, sugar, and salt, and fold into the rice while it's still warm. Let it cool to room temperature.

    Prepare the Salmon

    Slice the sashimi-quality salmon into thin pieces.

    Assemble Sushi

    On a nori sheet, spread a thin layer of sushi rice, lay slices of salmon on top, and roll tightly. Repeat for remaining nori sheets.

    Serve

    Cut the rolls into bite-sized pieces and serve with wasabi and pickled ginger on the side.

Tuna & Avocado Crunch Roll

    Rinse sushi rice under cold water until water runs clear. Combine with water in a rice cooker and cook according to manufacturer's instructions.

    Season the Rice

    Once cooked, transfer the rice to a bowl. Mix rice vinegar, sugar, and salt, and fold into the rice while it's still warm. Let it cool to room temperature.

    Prepare the Tuna and Avocado

    Dice sushi-grade tuna and slice the avocado.

    Assemble the Roll

    On a nori sheet, spread a thin layer of sushi rice, lay diced tuna and avocado slices on top, and sprinkle with crunchy tempura flakes. Roll tightly.

    Serve

    Cut the rolls into bite-sized pieces and serve with additional tempura flakes on top, if desired.
