Preheat the Oven
Preheat your oven to 200°C (400°F) to prepare for roasting the mushrooms.

Clean the Mushrooms
Gently clean the button mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary, and set them aside.

Chop the Shallots and Garlic
Peel and finely chop the shallots. Peel the garlic cloves and mince them.
Mixing Ingredients

Prepare the Miso Marinade
In a mixing bowl, combine the miso paste, olive oil, white wine, minced garlic, salt, and black pepper. Stir until well combined to create a smooth marinade.
Roasting

Combine Mushrooms and Marinade
Place the cleaned button mushrooms and chopped shallots in a large bowl. Pour the miso marinade over the mushrooms and shallots, tossing gently to coat evenly.

Spread on Baking Sheet
Transfer the coated mushrooms and shallots to a baking sheet, spreading them out in a single layer for even roasting.

Roast the Mushrooms
Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the mushrooms are tender and golden brown, stirring halfway through for even cooking.

Once roasted, remove the mushrooms from the oven. Sprinkle fresh parsley over the top for garnish. Serve warm as a side dish or appetizer.
