Prepare the Filling
Mix the Filling
In a large bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Assemble the Gyoza
Fill the Wrappers
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Dip your finger in water and run it along the edge of the wrapper. Fold the wrapper in half over the filling, pinch to seal, and create pleats along the edge for a decorative touch.
Repeat
Repeat the filling and sealing process with the remaining wrappers and filling.
Cook the Gyoza
Pan-fry
In a large skillet, heat 1 tablespoon of oil over medium-high heat. Place the gyoza in the skillet, flat side down, and cook until the bottoms are golden brown, about 2-3 minutes.
Steam
Add 1/2 cup of water to the skillet and cover with a lid. Steam the gyoza for about 5-7 minutes, or until the water has evaporated and the gyoza are cooked through.
Prepare the Dipping Sauce
Mix the Sauce
In a small bowl, combine soy sauce, rice vinegar, and hot mustard. Stir well and set aside.
