Prepare Tataki-Style Steak

Marinate the Steak
In a bowl, mix soy sauce, rice vinegar, mirin, sesame oil, salt, and black pepper. Add the beef tenderloin and marinate for at least 30 minutes.

Slice the Steak
Slice the steak thinly against the grain and sprinkle with chopped green onions and sesame seeds.
Make Ponzu Sauce

Combine Ingredients
In a small bowl, whisk together soy sauce, citrus juice, rice vinegar, mirin, and dashi stock. Set aside.
Prepare Sushi Rice

Cook Sushi Rice
Rinse sushi rice under cold water until water runs clear. Cook rice according to package instructions.

Season Rice
Once cooked, mix rice with rice vinegar, sugar, and salt while still warm.
Prepare Seared Salmon Sushi

Sear Salmon
Sear the fresh salmon fillet in a hot skillet for about 1 minute on each side until just cooked.

Assemble Sushi
Spread sushi rice on a nori sheet, place the seared salmon on top, and roll tightly. Slice into pieces and serve with wasabi and pickled ginger.
