Method
Cooking Instructions
- 1
Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the calabrian chili paste and cook for another minute.
- 3
Add Tomatoes
Add the canned whole tomatoes (with their juice) to the skillet. Use a wooden spoon to break the tomatoes up into smaller pieces. Season with salt and black pepper. Let the sauce simmer for about 15-20 minutes, stirring occasionally.
- 4
Combine Pasta and Sauce
Once the sauce has thickened, add the cooked spaghetti to the skillet. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
- 5
Serve
Serve the spaghetti hot, topped with whipped ricotta, fresh basil, and grated parmesan cheese.
